ASSISTANT FOOD & BEVERAGE MANAGER

We are looking to hire an Assistant F&B Manager who will be assisting the F&B Manager for the overall management of our Restaurants and Bars, ensuring exceptional customer service, efficient operations, and a clean, safe environment. You will lead and motivate a team of staff members, enforce company policies, and adhere to food safety regulations. JOB SUMMARY: The Assistant Food & Beverage Manager is responsible for assisting the F&B Manager in managing the day-to-day Food & Beverage Operations in a professional manner, while continually exceeding guest expectations.

MAIN DUTIES AND RESPONSIBILITIES

  1. Hands on and efficient management of all Food and Beverage operations within the outlets.
  2. Develop on-going training programs for Food Service and Bar personnel in the outlets.
  3. Participate in staff scheduling to always keep the outlets properly manned.
  4. To ensure that hygiene standards are maintained in all outlets.
  5. Ensure presence in all meals except on scheduled off day.
  6. To inspect the buffet at least 10 minutes before opening the restaurant and effect any corrections where necessary.
  7. To be physically present at the Restaurant entrance at opening times of both lunch and dinner to greet and welcome guests. You should be present from 7am for breakfast.
  8. Ensure smooth service of afternoon tea and evening snacks.
  9. Recognize VIP’s and repeat guests when walking to the restaurant.
  10. Conduct daily briefs with service staff to disseminate information, discuss problems and offer solutions.
  11. To ensure correct handling procedures to minimize China and glassware breakage.
  12. To ensure defects of machines and equipment are reported and followed up with R&M for servicing and repairs.
  13. Promote a la carte sales.
  14. To ensure that all Service and Bar staff are correctly and smartly dressed always.
  15. Foster teamwork spirit within the staff.
  16. Anticipate the needs/requests of F&B staff and guests, so we may always provide proactive service.
  17. To ensure the efficient running of the Outlets and that all F&B areas are clean, tidy, set and in good operational state.
  18. To ensure that monthly stock takes are conducted.
  19. To ensure that the buffet is replenished regularly, and cleanliness is maintained throughout the meals service time.
  20. Participate in Manager on duty shifts as required.
  21. Work closely with the kitchen team to ensure items served for lunch are not recycled for dinner.
  22. Monitor the snack line in Tangezi.
  23. Follow up on any birthday cakes with the pastry chef and ensure animation team is always present for presentation.
  24. To ensure there is always background music in the Restaurant and Bars.
  25. Handle and follow-through with all guest requests, problems, and concerns
  26. Ensure that all equipment is kept clean and is in excellent working condition through personal inspection and by following the preventative maintenance schedules in liaison with R&M.
  27. Any other duties may be directed from time to time by the F&B Manager or the Operations Manager.

Qualifications, experience, and skills

  • Bachelor’s degree in hospitality management.
  • Minimum of 2-3 years of experience in food and beverage management, preferably in a 4- or 5-star Resort.
  • Experience in All-Inclusive environment will be an added advantage.
  • Strong leadership and team management skills.
  • Excellent communication and interpersonal abilities.
  • Knowledge of food safety and sanitation regulations.

Job Summary:
The role of the entertainment manager is to be the head of the entertainment department, with overall responsibility for scheduling and delivering the entertainment program. He or she oversees the entertainment team, which creates entertainment activities for guests and handles the associated administrative processes.

Key responsibilities include:

  1. Managing, Directing, leading, and coaching the Entertainment team
  2. Introduce and manage the entertainment events and performances on the stage.
  3. Responsible for the daily activities on the pool (sports/activities/dance).
  4. Responsible for kids’ club area.
  5. Adopt the principle of 100% guest satisfaction and ensure that all entertainers adopt and work towards this principle.
  6. Liaise with the Financial Controller in running the departmental budget.
  7. Preparing and executing the departments training program based on needs identified and ensure the same is executed to the staff.
  8. Participate in planning and setting up of festive programs on a periodic basis.
  9. Prepare the weekly work schedules for the entertainers, day off, vacation, on-the-job training, and the distribution of team rotas.
  10. Communicate effectively to the General Manager, Operations Manager, other HODs and team to ensure everyone has a clear understanding of the Entertainment program.
  11. Develop SOPs of the Department
  12. Regulate music as in the guest areas such as restaurants as may be required.
  13. Create, coordinate, and implement all daily activities for kids and Adults.
  14. Plan and execute entertainment events, including shows, parties, and themed evenings.
  15. Take ownership of the Entertainment department, monitoring consistent delivery of a quality “In a world of its own” experience in line with the Baobab Standards.
  16. To Identify and facilitate monthly training for the animation team in areas relevant to their operations.
  17. Should demonstrate a strong passion for various facets of entertainment and possess the ability to curate and execute a diverse range of activities, and engagements.
  18. Monitor guest insights, using feedback to drive a culture of improvement.
  19. Attending the hotel management meeting, present the entertainment department, and ensure cross-departmental cooperation.
  20. Lead the daily entertainment department meeting and communicate clearly with the entertainers regarding the General manager and Operations Manager of entertainment instructions and guidelines.
  21. Develop the entertainment programs and make sure that they are updated and innovated.
  22. Reporting to the management about incident records during the entertainment activities.
  23. Maintain constant communication with the management and direct efficient working relationships with other hotel departments.
  24. Carry out inventories and material requirement forecasts in accordance with management procedures.
  25. Ensure that the entertainment team carries out all mandatory safety hotel procedures as required.
  26. Quality control and monitoring include checking and evaluating all activities, performances, events, and guest responses to ensure good timekeeping of performances and that the environment is appropriate, as well as the suitability of ambient lighting, sound levels, and background music in the entertainment area.
  27. Create solutions to the problems faced by the entertainers during the operation.
  28. Responsible for coaching and developing team members, including appraisals and all HR disciplinary procedures when required.
  29. Carry out any other duties assigned by management.

Qualifications, experience, and skills

  • Degree in Leisure and Recreation Management from a recognized university or
  • Diploma in Sports Administration and Management
  • Minimum of KCSE C-
  • 2-5 years of experience in the same role in a Resort is a must.
  • Proven leadership skills.
  • Strong knowledge of hotel operations, service standards, and guest expectations.
  • Effective communication and interpersonal abilities.
  • Detail-oriented and capable of managing multiple tasks and priorities.
  • Flexibility to adapt to a dynamic and fast-paced environment.
  • Knowledge of other languages (German, French, Italian, etc.) is highly desirable.
